Ingredients

1 cup broccoli florets

1 cup bell peppers (mixed colors), sliced

1 cup snap peas or sugar snap peas

1 medium carrot, julienned

1 small zucchini, sliced into half-moons

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Optional: sliced green onions for garnish

Instructions

Prepare the Ingredients: Wash and chop all the vegetables as indicated in the ingredients list for quick cooking.

Heat the Oil: In a large skillet or wok, heat the olive oil over medium-high heat. Allow it to get hot, but not smoking.

Sauté Aromatics: Add the minced garlic and grated ginger to the hot oil. Sauté for about 30 seconds until aromatic.

Stir-Fry Vegetables: Quickly add the broccoli, bell peppers, snap peas, carrot, and zucchini to the pan. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp. Make sure to stir continuously to prevent burning.

Add Sauce: Pour in the soy sauce and sesame oil. Toss everything together, making sure the vegetables are evenly coated with sauce. Stir-fry for another 1-2 minutes.

Garnish and Serve: Remove from heat, sprinkle with sesame seeds and optional sliced green onions. Serve hot over a bed of cooked rice or quinoa.

Enjoy your delightful and quick vegetable stir-fry that’s perfect for any day!
