Pumpkin Waffle Nachos with Yogurt Drizzle

2 cups pumpkin puree (canned or homemade)

1 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon salt

1 cup milk (or dairy-free alternative)

2 large eggs

2 tablespoons maple syrup (plus more for serving)

1 teaspoon vanilla extract

1 cup shredded pecans or walnuts (optional)

1 cup Greek yogurt (or dairy-free yogurt)

2 tablespoons honey (or agave syrup)

½ cup mini chocolate chips (optional)

Whipped cream (for topping, optional)

Instructions
 

Prepare the Waffle Batter: In a large mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. In a separate bowl, mix the pumpkin puree, milk, eggs, maple syrup, and vanilla until fully combined.

    Combine Wet and Dry Ingredients: Gradually add the pumpkin mixture to the dry ingredients, stirring just until combined. Be careful not to overmix; a few lumps are okay.

      Preheat Waffle Iron: Preheat your waffle iron according to the manufacturer’s instructions and lightly grease it with cooking spray or melted butter.

        Cook the Waffles: Pour enough batter into the preheated waffle iron to just cover the waffle grid. Close the lid and cook for about 3-5 minutes, or until golden brown and crisp. Repeat with the remaining batter.

          Cut the Waffles: Once the waffles are cooked, allow them to cool slightly. Cut each waffle into triangle or chip-sized pieces.
