Pumpkin Spice Tiramisu

1 cup strong brewed coffee, cooled

1/2 cup pumpkin puree

1/2 cup mascarpone cheese

1 cup heavy whipping cream

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon pumpkin spice blend (or a mix of cinnamon, nutmeg, and ginger)

20-24 ladyfinger cookies

Unsweetened cocoa powder, for dusting

Dark chocolate shavings (optional, for garnish)

Additional pumpkin spice for garnish (optional)

Instructions
 

Prepare the Coffee Mixture: In a shallow dish, combine the cooled brewed coffee and 2 tablespoons of pumpkin spice. Stir well to incorporate and set aside.

    Make the Pumpkin Mixture: In a medium bowl, whisk together the pumpkin puree, mascarpone cheese, granulated sugar, vanilla extract, and the remaining pumpkin spice until smooth and creamy. Adjust sweetness to your preference.

      Whip the Cream: In a separate bowl, beat the heavy whipping cream until soft peaks form. Gently fold the whipped cream into the pumpkin mixture until well blended. Be careful not to deflate the whipped cream too much—this will keep your tiramisu light and fluffy.

        Dip the Ladyfingers: Quickly dip each ladyfinger into the coffee mixture for about 1-2 seconds. Do not soak them, as they should remain firm enough to hold their shape in the dessert.

          Assemble the Tiramisu: In a rectangular or square dish, arrange a layer of dipped ladyfingers at the bottom. Spread half of the pumpkin mixture over the layer of ladyfingers, smoothing it out with a spatula. Repeat with another layer of dipped ladyfingers followed by the remaining pumpkin mixture on top.

            Chill the Tiramisu: Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the tiramisu to set.

              Serve: Before serving, dust the top with unsweetened cocoa powder and sprinkle with dark chocolate shavings and additional pumpkin spice, if desired. Slice and serve chilled.
