Pumpkin Spice Churro Bites

Ingredients
  

1 cup all-purpose flour

1/4 cup granulated sugar

1 tsp pumpkin spice

1/2 tsp baking powder

1/4 tsp salt

1/2 cup water

2 tbsp unsalted butter

1/4 cup pumpkin puree

1 large egg

Oil for frying (vegetable or canola oil)

1/4 cup brown sugar (for coating)

1/2 tsp cinnamon (for coating)

Extra pumpkin spice (optional, for coating)

Instructions
 

Prepare the Dough: In a medium saucepan, combine water, butter, and pumpkin puree. Heat over medium heat until the mixture comes to a slight boil. Remove from heat.

    Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, granulated sugar, pumpkin spice, baking powder, and salt.

      Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring continuously until a smooth dough forms. Allow it to cool for about 5 minutes.

        Incorporate Egg: Once the dough is slightly cool, add the egg and stir until fully incorporated and the dough is smooth.

          Heat the Oil: In a deep frying pan or saucepan, heat oil over medium-high heat to 350°F (175°C).

            Shape Churro Bites: Using a piping bag fitted with a large star tip, pipe small bite-sized churros (about 2 inches long) directly into the hot oil. Fry them in batches, being careful not to overcrowd the pan.

              Fry Until Golden: Fry each batch for about 2-3 minutes on each side or until golden brown. Use a slotted spoon to remove them from the oil and let them drain on paper towels.

                Prepare Coating: In a bowl, mix brown sugar, cinnamon, and additional pumpkin spice if using.

                  Coat the Churro Bites: While the churro bites are still warm, roll them in the sugar-spice mixture until fully coated.

                    Serve: Serve warm with a side of chocolate sauce, caramel sauce, or creamy maple dip for an extra delightful treat!
