Ingredients

1 cup pumpkin puree (not pumpkin pie filling)

2 cups white chocolate chips

1 cup sweetened condensed milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

¼ teaspoon salt

½ cup chopped nuts (walnuts or pecans optional)

Additional pumpkin seeds or pecans for topping (optional)

Instructions

Prep the Pan: Line an 8x8-inch or 9x9-inch baking dish with parchment paper, leaving some overhang to make it easier to lift out the fudge later. Lightly coat the parchment paper with non-stick spray.

Melt the Chocolate: In a medium-sized saucepan over low heat, combine the white chocolate chips and sweetened condensed milk. Stir continuously until the chocolate is completely melted and the mixture is smooth.

Add Pumpkin and Spices: Remove the saucepan from heat. Stir in the pumpkin puree, vanilla extract, ground cinnamon, ground nutmeg, ground ginger, and salt. Mix until all ingredients are well combined and you achieve a smooth, creamy consistency.

Incorporate Nuts (if using): If you want a nutty flavor and texture, fold in the chopped walnuts or pecans.

Pour Into Pan: Pour the pumpkin fudge mixture into the prepared baking dish, spreading it evenly with a spatula.

Chill: Cover the fudge with plastic wrap or foil and refrigerate for at least 4 hours, or until firm.

Cut and Serve: Once the fudge is set, lift it out of the baking dish using the parchment overhang. Cut it into small squares. If desired, top each piece with a sprinkle of pumpkin seeds or pecans for garnish.

Store: Store the pumpkin fudge in an airtight container in the refrigerator for up to 2 weeks.
