Ingredients

1 ½ cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp ground ginger

½ cup unsalted butter, softened

1 cup granulated sugar

1 cup packed brown sugar

3 large eggs

1 cup pumpkin puree (canned or fresh)

1 tsp vanilla extract

½ cup buttermilk

½ cup chopped walnuts or pecans (optional)

Cream cheese frosting (for decoration)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and lining a cupcake pan with cupcake liners.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.

Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 2-3 minutes.

Add Eggs and Pumpkin: Add the eggs one at a time, mixing well after each addition. Then, mix in the pumpkin puree and vanilla extract until fully incorporated.

Combine Dry and Wet Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, alternating with buttermilk. Start and end with the dry mixture. Mix until just combined and smooth. If using, gently fold in the chopped nuts.

Fill the Cupcake Liners: Divide the batter evenly among the lined cupcake cups, filling each about 2/3 full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the cupcakes to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Frost: Once cool, generously frost the cupcakes with cream cheese frosting. For an extra touch, sprinkle with a pinch of cinnamon or top with a pecan or walnut.

Serve and Enjoy: Serve your delightful pumpkin cupcakes at room temperature, and enjoy the warm, spiced flavor!
