For the Pumpkin Bars:

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

¼ teaspoon salt

¾ cup granulated sugar

½ cup brown sugar, packed

½ cup vegetable oil

2 large eggs

1 cup canned pumpkin puree

1 teaspoon vanilla extract

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk (optional, for desired consistency)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.

      Combine Wet Ingredients: In a separate large bowl, beat together granulated sugar, brown sugar, and vegetable oil until combined. Add in the eggs, pumpkin puree, and vanilla extract, mixing until smooth.

        Combine & Bake: Gradually add the dry ingredients to the wet mixture. Stir until just combined—don't overmix! Pour the batter into the prepared baking pan and spread evenly. Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

          Make the Cream Cheese Frosting: In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until everything is well combined. If the frosting is too thick, add a tablespoon of milk to achieve your desired consistency.

              Cut & Serve: With a sharp knife, cut the bars into squares or rectangles as preferred. Serve immediately, or store them in an airtight container in the refrigerator.
