2 ripe pears, peeled, cored, and finely diced

2 teaspoons fresh ginger, grated

1 cup heavy cream

1 cup whole milk

4 large egg yolks

1/2 cup granulated sugar, divided

1 teaspoon pure vanilla extract

1/4 teaspoon salt

1/4 cup turbinado sugar (for caramelizing)

Instructions
 

Prepare the Pears: In a medium saucepan over medium heat, combine the diced pears with 2 tablespoons of granulated sugar and the grated ginger. Cook for about 5-7 minutes, stirring occasionally until the pears are soft and fragrant. Remove from heat and set aside to cool.

    Preheat the Oven: Preheat your oven to 325°F (160°C).

      Make the Custard Base: In another saucepan, combine the heavy cream, whole milk, 1/4 cup granulated sugar, vanilla extract, and salt. Heat the mixture over medium heat, stirring frequently until it is just below boiling. Remove from heat.

        Whisk the Egg Yolks: In a mixing bowl, whisk together the egg yolks and the remaining 1/4 cup of sugar until pale and creamy.

          Temper the Egg Yolks: Gradually add the warm cream mixture to the egg yolks, whisking constantly to temper the yolks and prevent them from cooking.

            Combine Pears and Custard: Once well-combined, fold in the cooked pear and ginger mixture into the custard gently.

              Strain the Mixture: Strain the mixture through a fine-mesh sieve to ensure a smooth custard, removing any larger pieces of pear or ginger.

                Bake in Ramekins: Divide the custard mixture evenly among six ramekins. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.

                  Bake: Bake in the preheated oven for 30-35 minutes, or until the custards are set but still slightly jiggly in the center.

                    Cool Down: Remove the ramekins from the water bath and let them cool to room temperature. Once cooled, refrigerate for at least 2 hours, or overnight for best results.

                      Caramelize the Sugar: Before serving, sprinkle a thin layer of turbinado sugar over each custard. Using a kitchen torch, caramelize the sugar until it melts and turns golden brown. Alternatively, you can place them under a broiler for 1-2 minutes—watching closely to prevent burning.
