2 ripe peaches, sliced

4 slices of sourdough bread

4 ounces of Brie cheese, thinly sliced

2 tablespoons honey

2 tablespoons unsalted butter, softened

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Pinch of salt

Freshly ground black pepper

Arugula or baby greens (optional, for serving)

Instructions
 

Prep the Ingredients: Wash the peaches and slice them into thin wedges. Set aside.

    Spread the Butter: Take two slices of sourdough bread and spread 1 tablespoon of softened butter on one side of each slice.

      Assemble the Sandwich: Place the unbuttered side of the bread up, then layer with Brie cheese, peach slices, honey, thyme, salt, and pepper. Top with the second slice of buttered bread, buttered side facing out.

        Heat a Pan: In a skillet or griddle over medium heat, place the assembled sandwich. Cook for 4-5 minutes or until golden brown.

          Flip the Sandwich: Using a spatula, carefully flip the sandwich to cook the other side for another 4-5 minutes until the cheese is melted and the bread is golden brown.
