Ingredients

1 pound ground beef (or turkey for a lighter option)

1 small onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon Dijon mustard

4 cups beef broth

1 cup milk (or heavy cream for extra creaminess)

8 ounces elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

Salt and pepper, to taste

1 tablespoon Worcestershire sauce

¼ cup dill pickles, chopped (plus extra for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Beef: In a large pot or Dutch oven, over medium heat, add the ground beef. Cook until browned, about 5 minutes. Drain any excess fat.

Add Aromatics: Stir in the diced onion and cook until translucent, about 3 minutes. Add the minced garlic and sauté for an additional 1 minute until fragrant.

Season: Sprinkle in the smoked paprika, Dijon mustard, Worcestershire sauce, salt, and pepper. Mix well to combine the flavors.

Incorporate Broth and Pasta: Pour in the beef broth and milk. Bring the mixture to a gentle boil, then stir in the elbow macaroni.

Cook the Pasta: Reduce the heat to low and cover the pot. Let the pasta cook for about 7-9 minutes, stirring occasionally, until the macaroni is al dente and most of the liquid has been absorbed.

Add Cheese and Pickles: Remove the pot from heat. Stir in the shredded sharp cheddar and mozzarella cheese until melted and creamy. Fold in the chopped pickles for that classic cheeseburger flavor.

Garnish and Serve: Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley and additional chopped pickles on top.
