One-Pan Creamy Chicken & Spinach Pasta

1 lb (450g) boneless, skinless chicken breasts, cubed

8 oz (225g) penne pasta

3 cups fresh spinach, roughly chopped

1 medium onion, diced

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup freshly grated Parmesan cheese

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper, to taste

1 tbsp lemon juice (optional)

Fresh basil or parsley, for garnish

Instructions
 

Cook the Chicken: In a large skillet or a deep pan over medium-high heat, add the olive oil. Once hot, add the cubed chicken. Season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove the chicken from the pan and set aside.

    Sauté Onions and Garlic: In the same pan, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute, until fragrant.

      Cook the Pasta: Add the uncooked penne pasta to the pan, followed by the chicken broth. Stir well and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.

        Add Cream and Spinach: Stir in the heavy cream and Parmesan cheese until well combined. Gradually add the chopped spinach, stirring until it wilts down into the sauce. If using, add the lemon juice at this stage for a touch of brightness.

          Combine and Serve: Return the cooked chicken to the pan and combine everything gently. Taste and adjust seasoning as needed. Once everything is heated through and creamy, remove from heat.

            Garnish & Serve: Serve immediately and garnish with fresh basil or parsley and an extra sprinkle of Parmesan cheese if desired.
