One-Pan Cheesy Chicken and Broccoli Skillet

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups broccoli florets, fresh or frozen

1 cup uncooked rice (white or brown)

3 cups chicken broth or stock

1 cup shredded cheddar cheese (or your favorite blend)

1 medium onion, chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

Optional: Red pepper flakes for added heat

Fresh parsley, chopped, for garnish

Prepare the Ingredients: Begin by gathering and prepping all of your ingredients. Cut the chicken into bite-sized pieces, chop the onion, and mince the garlic. If using fresh broccoli, cut it into florets.

    Cook the Chicken: In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the chicken pieces to the skillet, seasoning them with salt, pepper, paprika, and Italian seasoning. Sauté the chicken until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the chopped onion and sauté for 2-3 minutes until translucent. Add in the minced garlic and broccoli florets. Sauté for another 3-4 minutes until the broccoli is bright green and slightly tender.

        Add Rice and Broth: Stir in the uncooked rice and then pour the chicken broth into the skillet. Bring to a boil, then reduce heat to low. Cover the skillet and let it simmer for about 15-20 minutes (for white rice) or 30-40 minutes (for brown rice), until the rice is tender and has absorbed most of the liquid. Check occasionally to ensure it doesn't stick to the bottom.

          Combine Everything Together: Once the rice is done, return the cooked chicken to the skillet. Stir everything together gently and let it cook for an additional 2 minutes to heat the chicken through.

            Add Cheese: Remove the skillet from heat. Sprinkle the shredded cheese evenly over the top. Cover the skillet for a few minutes until the cheese melts perfectly.
