1 lb (450g) ground beef

1 cup long-grain white rice, rinsed

2 cups beef broth

1 medium onion, diced

3 cloves garlic, minced

1 cup bell peppers, diced (any color)

1 can (15 oz) diced tomatoes, undrained

1 cup corn kernels (fresh, frozen, or canned)

2 teaspoons chili powder

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper to taste

2 cups shredded cheddar cheese

2 tablespoons olive oil

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Brown the Beef: In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef. Season with salt and pepper. Cook, breaking it apart with a spatula, until browned (about 5-7 minutes). Drain excess fat if necessary.

    Sauté the Vegetables: Add the diced onion, garlic, and bell peppers to the skillet. Sauté for about 3-4 minutes, or until the onion becomes translucent and the peppers soften.

      Add Seasonings: Stir in the chili powder, paprika, cumin, and a pinch of salt and pepper. Mix well and let it cook for another minute to toast the spices.

        Incorporate Rice and Broth: Add the rinsed rice, beef broth, diced tomatoes (with their juice), and corn to the skillet. Stir everything together to combine.

          Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 18-20 minutes, or until the rice is cooked and has absorbed most of the liquid.

            Add Cheese: Once the rice is fully cooked, remove the skillet from the heat. Sprinkle the shredded cheddar cheese evenly over the top. Cover again and let it sit for an additional 5 minutes to melt the cheese.
