1 lb ground beef

1 cup uncooked long-grain rice

1 can (14.5 oz) diced tomatoes, undrained

2 cups beef broth

1 medium onion, diced

2 cloves garlic, minced

1 cup frozen mixed vegetables (peas, carrots, corn)

1 tsp Italian seasoning

½ tsp paprika

Salt and pepper to taste

1 ½ cups shredded cheddar cheese

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Beef: In a large oven-safe skillet or pan, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.

    Sauté Onions and Garlic: Add the diced onions and minced garlic to the skillet. Sauté until the onions are translucent, about 3-4 minutes.

      Combine Ingredients: Stir in the uncooked rice, diced tomatoes (with juice), beef broth, frozen mixed vegetables, Italian seasoning, paprika, salt, and pepper. Bring the mixture to a gentle boil.

        Cook the Rice: Once it’s boiling, reduce the heat to low, cover the skillet with a lid, and let it simmer for about 15 minutes, or until the rice is almost cooked through. Stir occasionally to prevent sticking.
