Ingredients

1 cup creamy peanut butter (natural or classic)

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 1/2 cups graham cracker crumbs

1 cup semi-sweet chocolate chips

2 tablespoons coconut oil (or unsalted butter)

Sea salt, for sprinkling (optional)

Instructions

Create the Peanut Butter Mixture: In a mixing bowl, combine the creamy peanut butter, powdered sugar, and vanilla extract. Stir until smooth and well blended. Add the graham cracker crumbs and mix until fully incorporated, forming a thick, creamy mixture.

Mold the Peanut Butter Cups: Line a muffin tin with paper liners. Using your hands or a small ice cream scoop, press a spoonful of the peanut butter mixture into the bottom of each liner. Flatten it slightly, creating a solid base.

Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

Add Chocolate Layer: Pour the melted chocolate over the peanut butter bases in the muffin liners, filling them about three-quarters full.

Chill the Cups: Tap the muffin tin gently on the counter to help the chocolate settle evenly on top. If desired, sprinkle with a small pinch of sea salt. Place the muffin tin in the refrigerator and chill for at least 30 minutes, or until the chocolate has fully set.

Serve and Enjoy: Once set, carefully remove the no-bake peanut butter cups from the muffin tin and peel off the liners. Enjoy them immediately or store them in an airtight container in the fridge for up to a week.
