2 cups rolled oats

1 cup creamy peanut butter (or almond butter)

1/2 cup honey or maple syrup

1/3 cup unsweetened cocoa powder

2 tablespoons instant coffee or espresso powder

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/4 cup chopped nuts (walnuts or almonds, optional)

1/4 cup shredded coconut (optional)

Instructions
 

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang to make it easier to remove the bars later.
