1 cup rolled oats

1 cup finely grated carrots (about 2 medium carrots)

1/2 cup unsweetened shredded coconut

1/2 cup almond flour

1/4 cup maple syrup or honey

1/4 cup almond butter (or any nut/seed butter)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 cup raisins or chopped walnuts (optional, for added texture)

Pinch of salt

Extra shredded coconut or crushed nuts for rolling (optional)

Instructions
 

In a large mixing bowl, combine the rolled oats, finely grated carrots, unsweetened shredded coconut, and almond flour. Stir well to ensure that all the dry ingredients are evenly mixed.

    In a separate bowl, whisk together the maple syrup (or honey), almond butter, vanilla extract, ground cinnamon, nutmeg (if using), and a pinch of salt until you have a smooth mixture.

      Pour the wet mixture into the bowl of dry ingredients. Using a spatula or your hands, mix everything together until fully combined. If you’re using raisins or chopped walnuts, fold them in at this stage.

        Once the mixture is well combined, take a small scoop (about 1 tablespoon) and roll it into a ball between your palms. Continue this process until all the mixture is shaped into bite-sized balls.

          If desired, roll each bite in extra shredded coconut or crushed nuts for a fun coating.

            Place the carrot cake bites on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.

              Serve chilled and enjoy! Store any leftovers in an airtight container in the refrigerator for up to one week.
