2 cups graham cracker crumbs

1/2 cup unsweetened shredded coconut

1/2 cup unsalted butter, melted

1/4 cup brown sugar

2 cups fresh blueberries (or frozen, thawed)

1/4 cup sugar

1 tablespoon cornstarch

2 tablespoons lemon juice

1/2 teaspoon vanilla extract

1 cup cream cheese, softened

1/2 cup powdered sugar

1 cup whipped topping (such as Cool Whip)

Fresh mint leaves for garnish (optional)

Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, shredded coconut, melted butter, and brown sugar. Mix until the crumbs are evenly coated and pack this mixture firmly into the bottom of a greased 9x9-inch baking pan. Use the back of a measuring cup to compress it tightly. Place the pan in the fridge to set for about 30 minutes.

    Make the blueberry filling: In a medium saucepan over medium heat, combine 1 1/2 cups of the blueberries, sugar, cornstarch, lemon juice, and vanilla extract. Stir well and cook for about 5-7 minutes until the mixture is thick and bubbly. Remove from heat and fold in the remaining blueberries gently. Let the filling cool for about 10 minutes.

      Prepare the cream cheese layer: In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy. Gently fold in the whipped topping until fully combined.

        Assemble the bars: Once the crust is set, spread the cream cheese layer evenly over the crust. Then, pour the blueberry filling over the cream cheese layer, spreading it evenly to cover.

          Chill & serve: Cover the baking pan with plastic wrap and refrigerate for at least 4 hours or until fully set. Once chilled, cut into bars and garnish with fresh mint leaves, if desired. Serve cool and enjoy!
