20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup mushrooms, finely diced (cremini or button)

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

Fresh basil, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Boil a large pot of salted water. Once boiling, add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside to cool slightly.

      Sauté the Vegetables: In a large skillet over medium heat, add a splash of olive oil. Once heated, add the minced garlic and sauté until fragrant, about 30 seconds. Add the diced mushrooms and cook until softened, about 5-7 minutes. Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Season with Italian seasoning, red pepper flakes, salt, and pepper. Remove from heat and let cool slightly.

        Prepare the Cheese Mixture: In a large bowl, combine the ricotta cheese, half of the shredded mozzarella, grated Parmesan cheese, and the cooled mushroom-spinach mixture. Mix until well combined.

          Stuff the Shells: Gently stuff each cooked jumbo shell with the cheese and vegetable mixture. Aim to fill each shell generously but carefully to avoid tearing.

            Prepare for Baking: Spread 1 cup of marinara sauce in the bottom of a 9x13 inch baking dish. Arrange the stuffed shells in a single layer on top of the sauce. Pour the remaining marinara sauce over the shells, and sprinkle the remaining mozzarella cheese on top.

              Bake: Cover the baking dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray). Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
