10 mini sweet peppers (colors of your choice)

1 can (5 oz) of tuna in olive oil, drained

1 large ripe avocado, mashed

1 tablespoon Greek yogurt or mayonnaise (optional)

1 tablespoon lime juice

1/4 cup red onion, finely diced

1/4 cup cilantro, finely chopped

1 jalapeño, seeded and finely diced (optional for heat)

Salt and pepper to taste

Lemon wedges for serving

Prepare the Peppers: Preheat your oven to 375°F (190°C). Cut the mini sweet peppers in half lengthwise, removing the seeds and membranes. Place them on a baking sheet, cut side up.

    Make the Tuna Filling: In a medium bowl, combine the drained tuna, mashed avocado, Greek yogurt (if using), and lime juice. Mix until well blended and creamy.

      Add the Flavors: Stir in the diced red onion, chopped cilantro, diced jalapeño (if using), and season with salt and pepper to taste. Mix until evenly combined.

        Stuff the Peppers: Spoon the tuna and avocado mixture into each pepper half, packing it lightly but generously until filled.

          Bake the Peppers: Place the stuffed peppers in the oven and bake for about 15-20 minutes, or until the peppers are tender and slightly charred at the edges.

            Serve: Remove from oven, let cool for a minute, and serve with lemon wedges for squeezing over the top. Enjoy them warm or at room temperature!
