Mini Tofu Veggie Stir Fry Cups

1 block firm tofu, drained and pressed

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon cornstarch

1 cup bell peppers (red, yellow, green), diced

1 cup broccoli florets

1 cup snap peas, trimmed

2 cloves garlic, minced

1 teaspoon ginger, grated

2 green onions, sliced

1 tablespoon sesame seeds

Salt and pepper to taste

12 mini phyllo dough cups (store-bought or homemade)

Instructions
 

Prepare the Tofu: Cut the pressed tofu into small cubes, about 1-inch in size. In a mixing bowl, combine the tofu cubes with soy sauce, sesame oil, and a pinch of salt and pepper. Gently toss to coat the tofu evenly.

    Coat the Tofu: Sprinkle cornstarch over the marinated tofu and toss gently until all the pieces are coated thoroughly.

      Stir-Fry: Heat a non-stick skillet or wok over medium-high heat. Add a splash of sesame oil. Once hot, add the coated tofu cubes and stir-fry for about 5-7 minutes until golden brown and crispy on all sides. Remove the tofu from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add a bit more sesame oil if needed. Toss in the minced garlic and grated ginger, sauté for 30 seconds until fragrant. Add the diced bell peppers, broccoli florets, and snap peas to the skillet. Stir-fry the veggies for about 4-5 minutes until they are vibrant and slightly tender but still crunchy. Season with salt and pepper to taste.

          Combine Tofu and Vegetables: Add the crispy tofu back into the skillet with the veggies. Toss everything together and cook for another 2 minutes, ensuring that the tofu is heated through and all the flavors meld. Sprinkle with sliced green onions and sesame seeds for added flavor and garnish.

            Fill the Cups: Preheat the oven to 350°F (175°C). Place the mini phyllo dough cups on a baking tray. Spoon the stir-fried tofu and veggie mixture into each cup, filling them generously.

              Bake: Bake the assembled cups in the preheated oven for about 10-12 minutes, until the phyllo cups are golden and crisp.
