Ingredients

1 cup cooked spaghetti, drained

1 cup grated Parmesan cheese

1/2 cup plain Greek yogurt

2 large eggs

1/4 cup all-purpose flour

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1/4 cup chopped fresh parsley or basil (optional)

1/2 cup marinara sauce (for topping)

Extra grated Parmesan cheese (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with cupcake liners.

Mix Ingredients: In a large mixing bowl, combine the cooked spaghetti, 1 cup of Parmesan cheese, Greek yogurt, and eggs. Mix well until all ingredients are evenly incorporated.

Add Dry Ingredients: Stir in the flour, garlic powder, onion powder, salt, black pepper, and chopped parsley or basil, if using. Mix until everything is combined into a batter-like mixture.

Fill the Muffin Tin: Spoon the spaghetti mixture into the prepared muffin tin, filling each cup about 3/4 full to allow for some rising.

Bake the Cupcakes: Bake in the preheated oven for 18-20 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

Cool: Remove the muffin tin from the oven and allow the cupcakes to cool in the tin for about 5 minutes. Then, carefully remove the cupcakes and place them on a wire rack to cool completely.

Serve: Once the mini spaghetti cupcakes are cooled, top each with a spoonful of marinara sauce and a sprinkle of extra grated Parmesan cheese before serving.

Enjoy: Serve warm as a fun appetizer or snack at your next gathering!
