Mini Quiches with Tomato and Feta

4 large eggs

1 cup whole milk

1 cup cherry tomatoes, halved

1 cup crumbled feta cheese

1/2 cup diced bell pepper (red or yellow)

1/4 cup finely chopped green onions

1 teaspoon dried oregano

1/2 teaspoon garlic powder

Salt and pepper to taste

1 package (1 sheet) of puff pastry or pre-made mini pastry shells

Olive oil spray or butter for greasing the muffin tin

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Pastry: If using puff pastry, roll it out on a lightly floured surface to about 1/8 inch thickness. Cut out circles measuring about 3 inches in diameter and gently press these into the cups of a greased muffin tin to create pastry shells. If using pre-made pastry shells, place them directly into the muffin tin.

      Make the Filling: In a mixing bowl, whisk together the eggs and milk until well combined. Stir in the halved cherry tomatoes, crumbled feta cheese, diced bell pepper, chopped green onions, dried oregano, garlic powder, salt, and pepper. Mix until all the ingredients are evenly distributed.

        Fill the Shells: Carefully pour the egg mixture into each pastry shell, filling about 3/4 full to allow for expansion during baking.

          Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the quiches are puffed and golden brown on top. A toothpick inserted in the center should come out clean.

            Cool and Serve: Once done, remove the muffin tin from the oven and let the mini quiches cool for a few minutes. Carefully run a knife around the edges and gently lift them out. Serve warm or at room temperature as a delightful appetizer or breakfast treat.
