1 cup all-purpose flour

1/2 cup pumpkin puree

1/4 cup cocoa powder

1/4 cup brown sugar

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 large egg

1/2 cup milk (or non-dairy alternative)

1/4 cup vegetable oil

1/2 teaspoon vanilla extract

1/2 cup chocolate chips (semi-sweet or dark)

Instructions
 

Preheat your waffle maker. Make sure it's ready for some delicious, gooey bites!

    In a large mixing bowl, whisk together the flour, cocoa powder, brown sugar, granulated sugar, baking powder, cinnamon, nutmeg, and salt until combined.

      In a separate bowl, mix the pumpkin puree, egg, milk, vegetable oil, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients and stir until just combined; it’s okay if the batter is a little lumpy - do not overmix.

            Spoon the batter into the preheated waffle maker, filling each section about halfway (the batter will spread). Close the lid and cook for about 3-5 minutes, or until the waffles are cooked through and slightly crispy.
