1 cup sharp cheddar cheese, shredded

1/2 cup cherry tomatoes, diced

1/4 cup red onion, finely chopped

1/4 cup salsa

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream (optional)

Jalapeño slices (optional, for extra heat)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Peppers: Cut the mini bell peppers in half lengthwise and remove the seeds. Arrange them cut-side up in a baking dish.

Cook the Meat: In a skillet over medium heat, add the cooked ground beef or turkey. Mix in the black beans, cumin, chili powder, and season with salt and pepper. Cook for about 3-4 minutes, stirring until well incorporated.

Fill the Peppers: Spoon the meat and bean mixture into each halved bell pepper, filling them generously.

Add the Toppings: Top each pepper boat with diced cherry tomatoes, a sprinkle of red onion, and an even layer of shredded cheddar cheese.

Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

Serve and Garnish: Remove from the oven and let cool slightly. Garnish with fresh cilantro and any additional toppings you desire, such as sour cream or jalapeño slices.
