1 cup cooked chicken, shredded (rotisserie chicken is great)

1/2 cup taco seasoning (adjust for spice level)

1/2 cup salsa (mild, medium, or hot based on preference)

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup diced bell peppers (any color)

1/4 cup chopped green onions

1/2 cup sour cream (for serving)

Fresh cilantro leaves, for garnish (optional)

Cooking spray or olive oil (for greasing)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Muffin Tin: Lightly grease a 12-cup muffin tin with cooking spray or olive oil to prevent the biscuit cups from sticking.

      Prepare Biscuit Cups: Open the can of biscuit dough and separate the biscuits. Flatten each biscuit slightly with your hands and then press them into the bottom and up the sides of each muffin cup to form a cup shape.
