Mini Chicken Fajita Pasta Bites

1 lb. boneless, skinless chicken breast, diced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fajita seasoning

½ teaspoon paprika

½ teaspoon cumin

½ teaspoon salt

¼ teaspoon black pepper

½ cup shredded cheddar cheese

½ cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Mini tortilla chips (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the mini penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium-high heat, add olive oil. Once hot, add the diced chicken breast. Season with fajita seasoning, paprika, cumin, salt, and black pepper. Cook for about 5-7 minutes or until the chicken is fully cooked and golden brown. Remove the chicken from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the sliced bell peppers, diced onion, and minced garlic. Sauté for about 5 minutes or until the vegetables are tender and slightly caramelized.

        Combine Ingredients: Add the cooked chicken back into the skillet with the vegetables. Stir in the cooked mini penne and mix until all ingredients are well combined. Cook for another 2-3 minutes to heat through.
