2 cups fresh spinach, chopped

1 cup sharp cheddar cheese, grated

1 cup all-purpose flour

1/2 cup cornmeal

2 tsp baking powder

1/2 tsp salt

1/4 tsp black pepper

1/2 cup milk

1 large egg

1/4 cup olive oil

1 tsp garlic powder

1/2 tsp onion powder

Optional: sesame or poppy seeds for topping

Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare Spinach: In a pan over medium heat, sauté the chopped spinach for about 2-3 minutes until wilted. Set aside to cool slightly.

      Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, black pepper, garlic powder, and onion powder. Stir until well mixed.

        Combine Wet Ingredients: In another bowl, whisk together the milk, egg, and olive oil until smooth.

          Incorporate Ingredients: Pour the wet mixture into the dry ingredients and stir until just combined. The dough will be slightly wet. Gently fold in the sautéed spinach and grated cheddar cheese until evenly distributed.

            Shape Dough: Use a spoon or your hands to scoop small portions of the dough (about 2 tablespoons each) and shape them into circles. Place them on the prepared baking sheet, leaving space between each.

              Add Toppings (Optional): If desired, sprinkle sesame or poppy seeds on top of each dough circle for added flavor and crunch.

                Bake: Place the baking sheet in the preheated oven and bake for approximately 20-25 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
