Ingredients

1 medium head of cauliflower, cut into small florets

4 strips of bacon, cooked and crumbled

1 cup shredded cheddar cheese

1/2 cup ranch dressing

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (for added crunch)

Cooking spray or olive oil for greasing muffin tins

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C). Lightly grease a muffin tin with cooking spray or a brush of olive oil.

Steam Cauliflower: In a pot filled with about an inch of water, steam the cauliflower florets until fork-tender, about 5-7 minutes. Drain well and let cool slightly.

Mix Ingredients: In a large mixing bowl, combine the steamed cauliflower, crumbled bacon, cheddar cheese, ranch dressing, green onions, garlic powder, onion powder, salt, and pepper. Mix until everything is well coated and combined.

Fill Muffin Tins: Spoon the mixture into the greased muffin tin, filling each cup about 3/4 full. Press down gently to ensure they hold shape.

Add Breadcrumbs: Sprinkle the tops with breadcrumbs for an extra crunch.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes until the tops are golden brown and the edges are crispy.

Cool and Serve: Remove from the oven and let the mini cups cool in the tin for about 5 minutes. Carefully remove them and serve warm as a delicious appetizer or side dish!
