16 oz cream cheese, softened

1 cup pumpkin puree (not pumpkin pie filling)

1/2 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/4 tsp salt

For the Crust:

1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

For the Maple Glaze:

1/2 cup powdered sugar

3 tbsp maple syrup

1-2 tbsp milk (as needed for consistency)

1/4 tsp vanilla extract

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a 9x13 inch baking pan with parchment paper, leaving some overhang for easy removal of the cheesecake later.

    Prepare the Crust: In a medium bowl, mix together the graham cracker crumbs, melted butter, and granulated sugar until well combined. Press the mixture firmly into the bottom of the prepared baking pan to form an even layer. Bake for about 10 minutes until set, then let it cool while you prepare the filling.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the pumpkin puree, granulated sugar, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Beat until the mixture is fully combined and smooth.

        Bake the Cheesecake: Pour the pumpkin cheesecake filling over the cooled graham cracker crust. Smooth the top with a spatula. Bake for 30-35 minutes, or until the edges are set but the center still has a slight jiggle. Remove from the oven and allow to cool to room temperature, then refrigerate for at least 4 hours or overnight until fully chilled.

          Prepare the Maple Glaze: In a small bowl, whisk together the powdered sugar, maple syrup, milk, and vanilla extract until smooth. Adjust the consistency with additional milk if necessary; it should be a pourable glaze.
