Lemon Garlic Roasted Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

3 tbsp olive oil

3 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 tsp smoked paprika

1 tsp ground cumin

Salt and pepper to taste

4 whole grain wraps or tortillas

1 cup fresh spinach or mixed salad greens

1 avocado, sliced

1 medium tomato, diced

½ cucumber, sliced

¼ cup hummus (optional)

Fresh parsley or cilantro for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: In a mixing bowl, combine drained chickpeas, olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, ground cumin, and season with salt and pepper. Toss until chickpeas are evenly coated.

      Roast Chickpeas: Spread the chickpea mixture on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, shaking the pan halfway through, until they are golden and crispy.

        Assemble the Wraps: While the chickpeas are roasting, prepare your wraps. Lay out the whole grain wraps or tortillas on a flat surface. Spread hummus on each wrap (if using).
