Lemon Dill Chicken Skewers Tzatziki

For the Lemon Dill Chicken Skewers:

1.5 lbs chicken breast, cut into 1-inch cubes

1/4 cup olive oil

Juice and zest of 2 lemons

2 tablespoons fresh dill, chopped (plus extra for garnish)

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

1 teaspoon cumin

Wooden or metal skewers (soaked in water if using wooden ones)

For the Tzatziki Sauce:

1 cup Greek yogurt

1 cucumber, grated and excess water squeezed out

2 cloves garlic, minced

Juice of 1 lemon

1 tablespoon fresh dill, chopped

Salt and pepper to taste

Marinate the Chicken: In a large bowl, combine olive oil, lemon juice, lemon zest, fresh dill, minced garlic, salt, black pepper, paprika, and cumin. Mix well. Add the chicken cubes and toss to coat thoroughly. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Tzatziki Sauce: In a separate bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, salt, and pepper. Mix until well combined. Taste and adjust seasoning if needed. Cover and refrigerate until ready to serve (allow at least 20 minutes for flavors to meld).

      Assemble the Skewers: Preheat your grill to medium-high heat. Thread the marinated chicken pieces onto the skewers, leaving a small gap between each piece for even cooking.

        Grill the Skewers: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

          Serve: Remove the skewers from the grill and let them rest for a few minutes. Serve with the tzatziki sauce on the side for dipping. Garnish with additional fresh dill if desired.
