1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn kernels, drained

1 can (14 oz) diced tomatoes with green chilies

1 packet taco seasoning (about 1 oz)

4 cups chicken broth (low sodium)

1 cup shredded cheddar cheese

1 cup sour cream

1 spoonful of olive oil

Salt and pepper to taste

Tortilla chips (for serving)

Fresh cilantro and lime wedges (for garnish, optional)

Instructions
 

Cook the Meat: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing for about 3-5 minutes until the onion is translucent.

    Brown the Meat: Add the ground turkey or beef to the pot, breaking it apart with a spoon. Cook until browned and fully cooked, approximately 5-7 minutes. Season with salt, pepper, and the taco seasoning, stirring well to coat the meat evenly.

      Add the Vegetables: Stir in the black beans, corn, and diced tomatoes (with juices) into the pot. Mix well.

        Pour in the Broth: Carefully add the chicken broth to the pot, stirring to combine. Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer uncovered for about 20 minutes, allowing the flavors to meld together.

          Finish with Cheese: Once the soup has simmered, add in the shredded cheddar cheese. Stir until melted and creamy.
