1 cup of hummus (store-bought or homemade)

1 medium red bell pepper, thinly sliced

1 medium carrot, julienned

1 small handful of fresh parsley, chopped

2 tablespoons of sesame seeds (optional)

1 tablespoon of olive oil

Prepare Cucumbers: Start by washing the cucumbers thoroughly. Using a vegetable peeler or a mandoline, slice the cucumbers lengthwise into thin, flat ribbons (aim for about 1/8-inch thick). You can also use a spiralizer if you prefer noodle-shaped cucumbers.

    Season the Hummus: In a mixing bowl, combine the hummus with olive oil, salt, and pepper to your taste. This will enhance the flavor of your filling.

      Assemble the Rolls: Lay out a cucumber ribbon on a clean surface. Spread a generous layer of seasoned hummus evenly across the ribbon, leaving about an inch at one end.

        Add Fillings: Place a few strips of red bell pepper, some julienned carrot, and a sprinkle of chopped parsley on top of the hummus.
