1 lb (450 g) boneless, skinless chicken thighs or breasts

1/4 cup honey

Juice and zest of 2 limes

3 cloves garlic, minced

1 tsp soy sauce

1/2 tsp ground cumin

1/2 tsp paprika

Salt and pepper, to taste

2 tbsp vegetable oil

For the Rice:

1 cup jasmine or basmati rice

2 cups chicken broth or water

1/2 tsp salt

1 tbsp olive oil (optional)

For the Toppings:

1 cup cherry tomatoes, halved

1 avocado, sliced

1/2 cup corn (fresh or canned)

1/4 cup fresh cilantro, chopped

Lime wedges, for garnish

Optional: Sliced jalapeños for heat

Marinate the Chicken: In a bowl, mix honey, lime juice, lime zest, minced garlic, soy sauce, cumin, paprika, salt, and pepper. Add the chicken to the mix, ensuring it's well coated. Cover and let it marinate for at least 30 minutes (or up to 2 hours in the fridge for more flavor).

    Cook the Rice: While the chicken is marinating, rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, chicken broth (or water), and salt. Bring to a boil over medium-high heat. Once boiling, reduce to low heat, cover, and simmer for about 15 minutes or until the rice is tender and has absorbed the liquid. Remove from heat and let it sit, covered, for another 5 minutes. Fluff with a fork, and if desired, stir in olive oil for extra flavor.

      Cook the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off. Cook the chicken for 6-7 minutes on each side, or until fully cooked through and caramelized. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C). Once cooked, let the chicken rest for a few minutes before slicing it into strips.
