Honey Glazed Salmon with Rice

Ingredients
  

4 salmon fillets (6 oz each)

1/4 cup honey

3 tablespoons soy sauce (low-sodium preferred)

1 tablespoon Dijon mustard

2 garlic cloves, minced

1 tablespoon fresh ginger, grated

1 tablespoon olive oil

Salt and black pepper, to taste

1 cup jasmine rice

2 cups water or broth (chicken or vegetable)

1 tablespoon sesame seeds (for garnish)

2 green onions, chopped (for garnish)

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the honey, soy sauce, Dijon mustard, minced garlic, and grated ginger until well combined.

    Marinate the Salmon: Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the salmon, ensuring each piece is well coated. Marinate for at least 30 minutes in the refrigerator to enhance the flavors.

      Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a saucepan over medium heat, bring 2 cups of water (or broth) to a boil. Add the rice, a pinch of salt, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.

        Sear the Salmon: Heat the olive oil in a large skillet over medium-high heat. Remove the salmon from the marinade (reserve the marinade) and season with salt and pepper. When the oil is hot, place the salmon skin-side down in the skillet and sear for about 4-5 minutes without moving them. Carefully flip the salmon fillets and pour the reserved marinade into the skillet.

          Glaze the Salmon: Cook for another 3-4 minutes, spooning the glaze over the salmon occasionally. The salmon should be cooked through and have a beautiful, caramelized glaze. (Internal temperature should reach 145°F or 63°C.)

            Serve: Fluff the jasmine rice with a fork and divide it among plates. Top each plate with a glazed salmon fillet. Drizzle extra glaze from the skillet over the salmon for added flavor.

              Garnish & Enjoy: Sprinkle sesame seeds, chopped green onions, and optional fresh cilantro over the salmon and rice. Serve hot and enjoy this sweet and savory dish!
