Ingredients

1 pound baby carrots (or regular carrots cut into sticks)

3 tablespoons honey

2 tablespoons olive oil

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/2 teaspoon ground cinnamon

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Carrots: If using regular carrots, peel and cut them into sticks about 1/2 inch thick. Place the carrots in a large mixing bowl.

Make the Glaze: In a small bowl, whisk together the honey, olive oil, thyme, cinnamon, salt, and pepper until well combined.

Coat the Carrots: Pour the honey glaze over the carrots and toss them well to ensure they are fully coated.

Roast the Carrots: Spread the coated carrots on a baking sheet lined with parchment paper in a single layer.

Bake: Roast in the preheated oven for about 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through for even roasting.

Garnish and Serve: Once cooked, remove from the oven and transfer to a serving dish. Garnish with fresh parsley for an extra touch of color.
