Simmering is a crucial step in the honey glazed carrot recipe, allowing the ingredients to meld together and intensify the flavors. When you simmer the carrots in a mixture of honey, thyme, and apple cider vinegar, the heat helps to extract the natural sweetness of the carrots while allowing the honey to caramelize slightly. This process not only enhances the overall flavor profile but also ensures that each carrot is infused with the aromatic qualities of thyme and the tanginess of vinegar.

Ingredients

1 pound baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons honey

2 tablespoons unsalted butter

1 teaspoon fresh thyme leaves (or ΒΌ teaspoon dried thyme)

1 tablespoon apple cider vinegar

Salt and pepper, to taste

Optional: Chopped fresh parsley, for garnish

Instructions

Prepare the Carrots: If using regular carrots, slice them into even sticks or rounds to ensure even cooking. If using baby carrots, you can leave them whole.

Boil the Carrots: In a medium saucepan, bring salted water to a boil. Add the carrots and cook for about 5-7 minutes, or until they are fork-tender but still slightly crisp. Drain the carrots and set aside.

Make the Honey Glaze: In the same saucepan, melt the butter over medium heat. Add the honey and stir until well blended. Allow the mixture to simmer gently for about 2 minutes.

Add Flavors: Stir in the fresh thyme and apple cider vinegar to the honey-butter mixture. Allow it to cook for an additional minute to combine the flavors, stirring continuously.

Glaze the Carrots: Add the drained carrots back into the saucepan. Toss them gently in the honey glaze until they are well coated. Cook for another 2-3 minutes, letting the glaze envelop the carrots and caramelize slightly. Season with salt and pepper to taste.

Serve and Garnish: Transfer the glazed carrots to a serving platter. If desired, sprinkle with chopped fresh parsley for added color and freshness. Serve warm as a delightful side dish!
