1 pound whole baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons honey

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon balsamic vinegar (optional, for extra tang)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Carrots: If using regular carrots, peel them and cut them into uniform sticks about 2 inches long. If using baby carrots, you can leave them whole.

      Make the Glaze: In a large bowl, combine honey, olive oil, minced garlic, thyme, salt, and black pepper. If you want a hint of tanginess, add in the balsamic vinegar as well.

        Coat the Carrots: Add the carrots to the bowl and toss until they are evenly coated with the honey garlic glaze.

          Roast: Spread the carrots in a single layer on a baking sheet lined with parchment paper for easy cleanup. Roast in the preheated oven for 25-30 minutes, tossing them halfway through until they are tender and caramelized.

            Serve: Once roasted, remove the carrots from the oven and allow them to cool for a couple of minutes. Garnish with freshly chopped parsley for a pop of color and serve warm.
