Ingredients

4 medium sweet potatoes, peeled and diced into 1-inch cubes

1/4 cup unsalted butter, melted

1/4 cup honey

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1 tablespoon chopped fresh rosemary (optional, for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Sweet Potatoes: In a large mixing bowl, combine the diced sweet potatoes with olive oil, salt, and pepper. Toss until the sweet potatoes are evenly coated.

Make Honey Butter Mixture: In a separate bowl, mix together the melted butter, honey, and ground cinnamon until well combined.

Combine: Drizzle the honey butter mixture over the seasoned sweet potatoes. Toss again until all the sweet potatoes are well-coated with the honey butter glaze.

Roast in the Oven: Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast in the oven for 25-30 minutes, or until they are tender and caramelized, stirring halfway through for even cooking.

Garnish and Serve: Once roasted, remove from the oven and transfer to a serving dish. If desired, sprinkle chopped fresh rosemary on top for a wonderful aroma and added flavor. Serve warm.
