Honey Butter Roasted Carrots

1 lb baby carrots (or regular carrots cut into similar-sized sticks)

3 tablespoons unsalted butter

2 tablespoons honey

1 teaspoon sea salt

½ teaspoon ground cinnamon

¼ teaspoon black pepper

2 tablespoons chopped fresh parsley (for garnish)

Zest of 1 orange (optional, for added freshness)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a small saucepan, melt the unsalted butter over medium heat. Once melted, remove from heat and stir in honey, sea salt, ground cinnamon, and black pepper until well combined.

      In a large mixing bowl, toss the baby carrots (or carrot sticks) with the honey butter mixture until evenly coated.

        Line a baking sheet with parchment paper for easy cleanup. Spread the coated carrots on the prepared baking sheet in a single layer.

          Roast the carrots in the preheated oven for 25-30 minutes, flipping halfway through, until they are tender and caramelized at the edges.

            Once roasted, remove the carrots from the oven and sprinkle with fresh parsley and orange zest (if using) for a pop of color and freshness.

              Serve warm as a delightful side dish for any meal!
