1 pound beef sirloin, sliced thin against the grain

2 tablespoons olive oil

3 cloves garlic, minced

8 ounces mushrooms, sliced (button or cremini work well)

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

Salt and pepper to taste

12 ounces egg noodles

Fresh parsley, chopped (for garnish)

Cook the Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions, usually about 6-8 minutes. Drain and set aside.

          Combine Ingredients: Lower the heat and return the browned beef to the skillet. Stir in the sour cream until well combined. Heat through without boiling to prevent curdling, about 2-3 minutes.
