1 lb ground turkey

1 cup cooked quinoa

1/2 cup finely chopped Hatch green chilies (fresh or canned)

1/2 cup diced onion

2 cloves garlic, minced

1/4 cup chopped fresh cilantro

1 large egg

1/2 cup breadcrumbs (whole wheat recommended)

1 tsp ground cumin

1 tsp smoked paprika

1 tsp salt

1/2 tsp black pepper

1/4 cup shredded cheddar cheese (optional for topping)

1/4 cup barbecue sauce (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with non-stick spray.

    Mix Ingredients: In a large mixing bowl, combine ground turkey, cooked quinoa, Hatch green chilies, diced onion, minced garlic, cilantro, egg, breadcrumbs, cumin, smoked paprika, salt, and pepper. Mix well until all ingredients are thoroughly combined.

      Form the Cups: Scoop approximately 1/4 cup of the meat mixture into each muffin cup, pressing down gently to shape into cups.

        Add Toppings: If desired, top each meatloaf cup with a sprinkle of cheddar cheese and a dollop of barbecue sauce.
