1 box (8.5 oz) cornbread mix

1 cup milk

2 large eggs

1 cup shredded cheddar cheese

1 can (4 oz) diced Hatch green chiles, drained

1/2 cup cooked bacon or sausage, crumbled (optional)

1/2 cup diced bell peppers (any color)

1/4 cup chopped green onions

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.

    Prepare the Cornbread Mixture: In a large mixing bowl, combine the cornbread mix, milk, and eggs. Whisk until just combined—do not overmix!

      Add the Flavors: Stir in the shredded cheddar cheese, diced Hatch green chiles, cooked bacon or sausage (if using), diced bell peppers, green onions, cumin, paprika, and season with salt and pepper. Mix until well incorporated.

        Pour into the Dish: Pour the cornbread mixture into the prepared baking dish, spreading it evenly.

          Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

            Cool & Serve: Remove the egg bake from the oven and let it cool for about 5 minutes. Slice into squares and serve warm, garnished with fresh cilantro if desired.
