Hatch Chili Chicken Enchilada Bites

1 lb cooked chicken, shredded

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1 can (10 oz) hatch chili enchilada sauce

1 can (4 oz) diced green chiles

1/2 cup diced red onion

1 tsp garlic powder

1 tsp cumin

1/2 tsp smoked paprika

1 tsp salt

1/2 tsp black pepper

20 small corn tortillas

Fresh cilantro for garnish

Sour cream for topping

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Filling: In a large bowl, combine the shredded chicken, Monterey Jack cheese, cheddar cheese, half of the hatch chili enchilada sauce, diced green chiles, diced red onion, garlic powder, cumin, smoked paprika, salt, and pepper. Mix until well combined.

      Prepare the Tortillas: To soften the corn tortillas, wrap them in a damp paper towel and microwave for 30 seconds. This makes them pliable and easier to work with.

        Assemble Enchilada Bites: Take one tortilla and place a generous tablespoon of the chicken filling in the center. Roll the tortilla tightly and place it seam-side down on the prepared baking sheet. Repeat this process with the remaining tortillas and filling.

          Add Sauce and Cheese: Once all the bites are assembled, drizzle the remaining hatch chili enchilada sauce over the top of the bites. Then sprinkle the remaining Monterrey Jack and cheddar cheese on top.

            Bake: Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the cheese is bubbly and lightly golden.

              Garnish & Serve: Once cooked, remove from the oven and let cool for a few minutes. Garnish with fresh cilantro and serve alongside sour cream for dipping.
