Grilled Chicken Peach Salad

2 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced

6 cups mixed salad greens (arugula, spinach, and romaine)

½ red onion, thinly sliced

½ cup crumbled feta cheese

¼ cup toasted pecans or walnuts

Olive oil, for grilling

Salt and pepper, to taste

For the Honey-Lime Dressing:

2 tablespoons honey

2 tablespoons fresh lime juice

¼ cup olive oil

1 teaspoon Dijon mustard

Salt and pepper, to taste

Instructions
 

Preheat the Grill: Heat your grill to medium-high heat. Lightly oil the grates to prevent sticking.

    Prepare the Chicken: Season the chicken breasts with salt, pepper, and a drizzle of olive oil. This will help them brown nicely on the grill.

      Grill the Chicken: Place the chicken on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove the chicken from the grill and let it rest for 5 minutes before slicing.
