8 oz pasta (such as rotini or penne)

2 boneless, skinless chicken breasts

1 tbsp olive oil

Salt and pepper, to taste

1 cup romaine lettuce, chopped

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese

1/4 cup croutons

1/4 cup Caesar dressing (store-bought or homemade)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Chicken: While the pasta cooks, preheat your grill or grill pan over medium-high heat. Pat the chicken breasts dry with paper towels and rub with olive oil, salt, and pepper.

      Grill the Chicken: Place the chicken on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing it into bite-sized pieces.
