Ingredients

2 cups cooked chicken, shredded (preferably rotisserie)

1 cup BBQ sauce (your favorite brand or homemade)

1 bag (12 oz) tortilla chips

2 cups shredded cheddar cheese

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 jalapeño, sliced (optional, for heat)

1/2 cup red onion, diced

1 avocado, diced

1/4 cup fresh cilantro, chopped

Sour cream, for serving

Lime wedges, for serving

Instructions

Preheat the Grill: Start by preheating your grill to medium heat (around 350°F/175°C). If you’re using a grill pan, heat it on the stovetop.

Prepare the Chicken: In a medium bowl, mix the shredded chicken with the BBQ sauce until well coated. You can add more or less sauce depending on your taste preference.

Grill the Chicken: Place the BBQ-coated chicken on the grill (or grill pan) for about 5-7 minutes, just enough to warm it up and get a slight char. Remove from heat and set aside.

Assemble the Nachos: On a large baking sheet or a grill-safe cast-iron skillet, spread an even layer of tortilla chips. Scatter the grilled BBQ chicken over the chips, followed by the black beans, corn, diced red onion, sliced jalapeño, and finally sprinkle the shredded cheddar cheese generously on top.

Grill the Nachos: Carefully place the baking sheet or skillet on the grill, close the lid, and grill for about 5-10 minutes or until the cheese is melted and bubbly. Keep an eye on it to prevent burning.

Garnish and Serve: Once the cheese is melted, remove the nachos from the grill. Top with diced avocado and chopped cilantro. Serve immediately with dollops of sour cream and lime wedges on the side for drizzling.

Enjoy! Dive into your smoky BBQ chicken nachos with your friends or family, and enjoy the explosion of flavors!
