8 ounces elbow macaroni

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups whole milk

2 cups shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

1-2 fresh green chilies (diced, seeds removed for less heat)

½ cup jalapeños (pickled or fresh, finely chopped)

Salt and black pepper to taste

1 cup breadcrumbs (panko preferred)

¼ cup grated Parmesan cheese

Cooking spray or oil for greasing the muffin tin

Cook the Macaroni: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute, whisking continuously until it forms a paste (roux). Gradually add the milk, whisking until smooth and thickened (about 5-7 minutes).

      Add the Cheese: Lower the heat and add the shredded cheddar and Monterey Jack cheese to the sauce, stirring until completely melted and combined. Season with garlic powder, onion powder, smoked paprika, salt, and black pepper. Fold in the diced green chilies and chopped jalapeños into the cheese sauce.

        Combine with Pasta: Add the cooked macaroni into the cheese sauce mixture, stirring until every piece is coated in the cheesy goodness; set aside to cool slightly.

          Preheat Oven: Preheat your oven to 375°F (190°C) and grease a mini muffin tin with cooking spray or oil.

            Create Bites: Using a tablespoon, scoop the mac and cheese mixture into the greased mini muffin tins, pressing them down firmly. Top each bite with a sprinkle of breadcrumbs and a sprinkle of Parmesan cheese.

              Bake: Place the muffin tin in the preheated oven and bake for 20 minutes, or until the tops are golden brown and crispy.
