Ingredients

For the Cornbread:

1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk

2 large eggs

1/4 cup unsalted butter, melted

1 cup sweet corn kernels (fresh or canned)

For the Honey Butter:

1/2 cup unsalted butter, softened

1/4 cup honey

A pinch of sea salt

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Grease and lightly flour an 8-inch square or round baking pan.

Mix Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk together the buttermilk, eggs, and melted butter until blended.

Combine Ingredients: Pour the wet ingredients into the dry mixture and stir gently until just combined. Fold in the sweet corn kernels, being careful not to overmix.

Bake the Cornbread: Pour the batter into the prepared baking pan. Bake for about 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Prepare Honey Butter: While the cornbread is baking, prepare the honey butter. In a small bowl, combine the softened unsalted butter, honey, and a pinch of sea salt. Mix until smooth and creamy. Set aside at room temperature.

Cool and Serve: Once the cornbread is done baking, allow it to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool slightly before slicing.

Enjoy: Serve warm with a generous dollop of the homemade honey butter on top. Feel free to add a drizzle of honey over the butter for an extra sweetness!
